Following collection, the eggs are washed and dried, inspected, further washed if necessary, and then sized.

Each egg is transported through the egg washer, which consists of a bath of high-temperature water, brushes, a continuous spray of chlorinated rinse water, and then blowers to dry the eggs.

Following washing, the eggs pass through Cotner Farms, Inc. Quality Control Center.  Within the Quality Control Center, the eggs are first inspected with a dirt-detector.  The dirt-detector takes electronic images of each egg and then, through the use of a computer, determines the presence of any debris on the eggshell.   If debris is found on an egg, that egg is redirected through the washer.

Eggs that meet the approval of the dirt-detector are next inspected with a crack-detector.  The crack-detector uses sonar to determine the presence of cracks within each egg-shell.   Through the use of this inspection device, greater than 99% of the packaged eggs are crack-free.  Cracked eggs are automatically transferred out of the egg processing line.

Once the eggs have been thoroughly washed and inspected, they are graded according to weight.  Each egg is individually weighed in the egg grading  process and classified as either a small, medium, large, extra-large, jumbo, or super-jumbo egg.  The eggs are then packaged based upon these size classifications.
